It’s winter time and it’s bitterly cold this year so most of us stay in and warm up to a nice bowl of soup keeping indoors. Not Jay Ray, he comes from the old school. While most BBQ caterers are tucked in under a warm blanket, those of us that are brave enough will find Jay Ray outside at 2:00 a.m. getting ready for his next gig by tossing beef brisket and pork ribs onto his smoker.

OLD SCHOOL - What is meant by old school? Real charcoal and real wood. Jay Ray creates his own rubs and sauces. He makes his own delicious side dishes including Killer Mac n Cheese, Mom’s Baked Beans, Homemade Potato Salad & Cole Slaw. For the past seven years he has been perfecting his barbecue skills and it’s his passion that drives him. Jay Ray was asked for a little background. Here’s a little of what he had to say -

“Jay Ray's BBQ came together out of a passion and love for cooking...especially if it could be cooked on a grill. I was a regular with the food channel and my childhood passion for cooking flooded back to me. My heroes seemed to be the BBQ geniuses and I began to visit any BBQ place, food stand and truck that I could get to” he says while chuckling. So he began experimenting, making his own sauces and spices, varying cooking methods and temperatures.

“Pretty soon I thought I made some pretty tasty BBQ. Before long the volunteer line to taste test began to grow. This led into the tasters asking me to make a slab for them, a pound of pulled pork and my tasty BBQ chicken. I decided to try some side dishes and send them along. Pretty soon the demand overcame what I could do at home so I rented a commercial kitchen. - Jay Ray's BBQ was born.”

This year, Jay Ray will focus on his Pop Up dining locations & drive his catering services. He’s already taking orders for graduations and because his BBQ is so good, his calendar fills up fast. But don’t worry, you can always catch Jay Ray’s BBQ at this years two day barbecue event May 15th & 16th in Downtown Wyandotte and other local events.
